We are a small production winery, specialising in premium quality, limited production wines. Based in the Santa Ynez Valley in Santa Barbara County. Our grapes are from Qupe’s biodynamically farmed vineyard in the Edna Valley.
The Process: The grapes are harvested on “fruit days” based on the Biodynamic lunar calendar. On arrival into the winery they are then subjected to “pigeage” (stomping by foot), they then are cold soaked to allow the color, flavor and tannins to develop, then the juice is transferred into barrels.
The Wines: spend about 3 years in barrel to fully integrate the complexities of the syrah. Both Ethan and Lee have a skilled vision of how the wines are developed and instinctively know when the juice is ready to bottle
The Barrels: are a combination of new and used French oak. We find the tighter grain and delicate release of influence allows the wines to mature and develop.
